I hope you will forgive me for this spam/shameless plug, but perhaps the project is also interesting for someone who wants to get involved with pywlroots: I have just published "Gabbia - a Wayland kiosk", a compositor that only presents one application at a time in maximized mode.
The source code is under an MIT license, is not very extensive and is contained in a single file.
The project is still in its early stages, but I think it is "good enough" to be used by others or to see the use of pywlroots outside of the more complex Qtile compositor.
I know that there is a similar project "Cage", but I missed a few functions there (layer shell, foreign toplevel management, ...). However, the project is not a clone of Cage, but an independent project.
