I think it would be a good idea to try to get the manifest into Wine's upstream source tree.
Since especially older projects like Wine are sometimes skeptical about "newer" technologies like Flatpak, I would not expect them to adopt it for their Gitlab CI workflow like GNOME and KDE right away.
But as a starting point, I think they could see the value in being able to provide a single-file Flatpak bundle to users/testers, e.g. it could make it easier to test @afrantzis's Wayland branch.
