Update v6.5 exercises to v8.1 #9

As of 17 Oct 2022, the version of Elasticsearch used for the Engineer certification exam is v8.1.

Most of the exercises currently available in the exercises folder were written for v6.5. These exercises should be rewritten to be compliant with v8.1.
