Clean up sample Keycloak tokens

Currently we keep many of the default claims in the sample Keycloak config. This is confusing to the users who try the gateway for the first time. We should clean-up these default tokens and remove most of the optional/unnecessary claims.

Just checking - I see this is currently assigned. Does this mean there is active work on this? If so, should this be tagged for Beta or Mid-march?

If not, then maybe un-assign until this is being actively worked on.
