Update the docs to use Ping Pong instead of the transfers app

TBD if we want to do this - it is on hold for now as we don't want to commit to changing things in quartz right now, as v0.1.1 is working. We will keep this issue open, and update it as new decisions are made. Ping pong can be seen in #271
