[Data Instrumentation] Add capabilities to track user behaviour and collect metrics

As a WM Extension team, we want to be able to collect relevant metrics
So we can understand users behaviour, their pain points
And work on improving the overall experience with the extension.

Acceptance Criteria

• A defined list of UI components to be instrumented.
• Metrics should be accessible to anyone in the org via a dashboard.

I haven't used Sentry or OpenTelemetry in extension before, but I think it should be possible.
