Is there anywhere in VS where we can change the color of the hint background or text? I tend to run a high-contrast theme on my machine and it can make it difficult to see the letters.

It is not currently configurable. I would accept a PR to make it configurable. I believe the change would be in this file: https://github.com/jsturtevant/ace-jump/blob/master/AceJumpPackage/View/LetterReference.xaml
