Build fails on Netlify

Build fails on Netlify, because npm doesn't seem to install platform-specific packages for this project. First dependency to fail is parcel/watcher, parcel-bundler/watcher#152

Add optional dependency to package.json, as suggested, only moves the problem to the next failing package (this time lightningcss).

An older version of Parcel (on dice-roll) seems to work fine?
