openapi.yml doesn't list all supported matches

pyof and of_core MatchBase support more matches than the current ones that are documented on openapi.yml, it makes sense to update the openapi spec docs accordingly based on the ones that are meant to be officially supported.

Recently @ajoaoff also has increased of_core's test cov for some matches https://github.com/kytos-ng/of_core/blob/master/tests/unit/test_match.py#L26-L55, when deciding on which ones to include we can double check if we have test coverage for them to be sure
