[FEAT] Include grace period in sample docker compose

Wanted change

Include stop_grace_period in docker compose file in the readme and docker page

Reason for change

The current samples have no setting for it and fall over to the docker default of 10s, this means that when qbittorrent often takes over 10s to shutdown during docker compose down it will be killed and shutdown uncleanly, forcing rechecking of active files during the kill.
