It would be really cool if the vending machine had a nice shiny display to grab attention and make it easier to use.

Investigate how easy it would be to interface to a SPI touch screen display.

mich181189 has ordered one of these to try: https://rover.ebay.com/rover/0/0/0?mpre=https%3A%2F%2Fwww.ebay.co.uk%2Fulk%2Fitm%2F232849348166

Failing that, a Nextion display would be easier to interface to, but maybe not quite so flexible and requires windows software to design interfaces on.
