With Documenter.jl, I was able to customize/theme my documentation pages so that they all have this nice purple look and different font, e.g., https://juliadynamics.github.io/DrWatson.jl/dev/

Any possibilities for themeing pollen.jl pages?

It's not possible yet but definitely something I would like to have, has also been requested by other people :D
