Two options:

InfluxDB or TimeScale on-device. Might cause trouble with the RPi SD Card (as we've seen at c-base)
Use SignalK AWS IoT integration and run the time series database in the cloud

Our SK logs are on S3, so it is possible to replay them to populate the time series.
