The FileVault enable workflow polls the device regularly after it is started. Consider updating the inventory storage with the current status — i.e. "pending," "profile sent". Also if the workflow exits without successfully escrowing that should be reflected, too. Such as "timed out polling/never encrypted," "issue decrypting PSK" etc. etc.
