Verizon Data (CDMA/LTE) Not Working

So I've tried a stock Lineage 15.1 build and an eelo OS 15.1 (basically reskinned Lineage) build using these trees, and both times Verizon's mobile data seems to be broken. I've seen it work, but for some reason it won't stay working past the first reboot.

It outright never worked on stock Lineage, but on eelo things were different for a bit. The settings menu gave me an option to set my preferred data SIM. Once I set it to SIM 1 (my only SIM slot, I'm not using the dual SIM model) it worked perfectly fine, until I rebooted the phone and now data does not work again. The option to set my preferred data SIM is also now grayed out and not changeable.

I want to say that this issue has to do with the ROM now thinking my phone is dual sim even when it's not, but I could be wrong. Regardless, I have attached a couple logs below but please let me know if more are needed

BUMP, took out the SIM card and rebooted the phone. Then turned it off again and re-inserted it. Now LTE data is working just fine. I'll keep this posted if there's anything else strange that happens.

EDIT: Looks like MMS doesn't want to work for me, even when my LTE is otherwise fully functioning
