Just run some tests, it seems the email sent is using default wordpress from and name of sender are all default ones from wordpress:

While I used the bellow settings in WP.

The tick to enable SMTP also does not stay marked as enabled, after saving it, it returns to not showing as marked.

@uhlhosting, You are on the wrong site. This is not WP Simple SMTP.
