I don't see it planned features, so leaving it here in advance as no plugin has support for this technology in OBS yet.

you mean the query / request will support graphQL query? or the parsing on the response?

I'd say mostly show proper expected fields for requests and reponses during the configuration process. Maybe integrate with the schema some day and autocomplete/autouggest.
