freshen cross-build script to use the builder container

The cross-build script for building the project locally and predictably is out of date now that the CI is using the ziti-builder container image. Update the script the use the builder image too.

The ziti cross-build script to update: dist/docker-images/cross-build/linux-build.sh

The CI step to emulate: linux-build in .github/workflows/main.yml
