• Privacy VPN: set metric for gateway to route all network traffic through VPN network
• Corporate VPN: no set metric. keep default gateway as it is. Then private network traffic will route through VPN network, and other internet traffic still route via as default gateway

Choosing any of these 2 types of VPN is purely based on business requirements.
If privacy is mandatory, all traffic should be routed through VPN network where everything is filtered/monitored by the organization; this setup also requires high availability and complex design in VPN network side.
In other hand, to optimize performance of VPN server and network utilization, Corporate VPN setup is preferred.
