Update GSoC 2025 Idea List Before Deadline

Hi @henrykironde, apologies for the delay – we were all at the PyBaMM Battery Modelling Conference recently and no one was available to proceed with this request. We have added one project now via pybamm-team/pybamm.org#246. I can write a PR to update the files you've mentioned.

Would it be possible to retroactively include PyBaMM at the moment?
