As of this morning, on a fresh Ubuntu server:

# curl -fsSL https://packages.redis.io/gpg | sudo gpg --dearmor -o /usr/share/keyrings/redis-archive-keyring.gpg
# echo "deb [signed-by=/usr/share/keyrings/redis-archive-keyring.gpg] https://packages.redis.io/deb $(lsb_release -cs) main" | sudo tee /etc/apt/sources.list.d/redis.list
# apt-get update
# apt-get install redis-stack-server
# systemctl enable redis-stack-server
# systemctl start redis-stack-server

works like a charm!
Don't know what you did, but thank you so much guys!

... and ... it's not working anymore after the package has been updated.
It does install but systemctl doesn't work anymore as the service is not found.

@Vincz A systemctl script is on the list of things to actually do. We don't support that / document it anywhere yet.

Sorry @chayim, my bad. I though the issue was solved since it was working a few days ago and I didn't create the script myself.
