Strawberry Rhubarb Pie

Ingredients

  • 2.5 T Tapioca
  • 1 c sugar
  • 1/4c fresh orange juice
  • 1/4t salt
  • 1/4t pepper
  • 3c cut rhubarb
  • 1.5-2 c sliced strawberries
  • 1T butter

Pastry Crust

  • 2c flour
  • 1t salt
  • 3/4c crisco
  • 5T cold water

Instructions

  • In a large bowl, combine rhubarb, tapioca, sugar, salt, pepper and orange juice
  • Place in pastry-lined 9 inch pie plate
  • Place sliced strawberries on top (cover the entire top so you can barely see the rhubarb!)
  • Dot with butter
  • Cover with pastry (lattice crust recommended!)
  • Bake at 400F for 50-60 minutes
