At this moment, version 3.5.1 (april 2024) is published in https://pypi.org/project/shotgun-api3/
the latest verison 3.6.2 (august 2024) is not.
Is the latest version stable enough to be used in production ?

The biggest problem is that the pypi package is not maintained by Autodesk. Autodesk should seriously consider taking over the pypi package and not having it run by a third-party if they have security in mind.
