Improve Stellar SDEX documentation

@briwylde08 I'm glad we're cleaning this up and happy to move forward with the best way to organize this pending work. One of my gripes with Discussions is that they don't show up in the reference history of the original issue, leaving little to no link between the two as you'd expect with issue cross-reference histories.

Again, I'm all for best organizing the docs repo. Mind sharing the ideas behind moving some things to Discussions with these direct references? Trying to think of how to make it simple for new users¹ to contribute in areas that are slightly behind.

Hey @JFWooten4! The DevRel team is working on a better way to triage docs issues and work. We admittedly haven't done a great job at tracking, prioritizing, and completing issues in the past and are working to rectify this. We are experimenting with a new process that involves keeping issues that are actionable, assigned, and being worked on in the issues queue while ideas and topics that warrant further discussion or are not actively being worked on (but are still good ideas) in the Discussions tab. We want to keep the issues queue cleaner and less overwhelming but still keep track of ideas publicly.

We are mirroring the process that started in the Stellar protocol GH here: https://github.com/stellar/stellar-protocol/discussions, where they track ideas via the Discussions tab.

It may not be the best process but we made these decisions to be able to handle issues better than we have previously. It's a work in progress! And can probably still be iterated on. The references to older issues should hopefully just be temporary as conversations move to Discussions.

That's a very long-winded answer and I'm happy to take any concerns to the team, so let me know if you have any questions.
