Sunset current payments flow #132

Remove the current payments flow from the wallet backend, since the state change indexer implements this already

remove the api endpoint
the code in the ingestor that updates the payment table
delete the payments table
remove payments from internal/data/models.go (and consider removing models.go entrirely and doing a refactor)
