similarly to #77, the Mining Protocol specs deserve a cleanup/rewrite

outdated images
lack of clarity on some concepts
lack of formatting standards

the goal of this task is not to change the protocol itself... all the semantics should remain the same

the goal here is simply to make it easier for the reader to understand the specs
