We should align on https://devguide.python.org/versions/ for the different python version to consider supporting.

We should run the acceptance tests in a matrix of supported versions: https://docs.github.com/en/actions/writing-workflows/choosing-what-your-workflow-does/running-variations-of-jobs-in-a-workflow
