Is there a way to do a mixpanel.alias for when a user signs up?

Nope, but it would be awesome if there was :) It shouldn't be too tough to build.

Looks like we need an AliasEvent subclass of EventTracker. https://mixpanel.com/help/reference/http#distinct-id-alias
