<h3>Ingredients</h3>

<li>2 lbs (907.18 g) Oxtail chopped into 2 to 3cm chunks</li>
<li>1 Cup (236.59 g) Butterbean</li>
<li>1 tbsp (1 tbsp) Oxtail or all-purpose </li><li>seasoning</li>
<li>1 tsp Browning</li>
<li>1 tsp Salt</li>
<li>1 ½ tbsp (1.5 tbsp) Dark brown sugar</li>
<li>1 Maggi stock cube</li>
<li>1.8 oz (51.03 g) Onion Sliced</li>
<li>2.5 oz (70.87 g) Bell pepper Sliced</li>
<li>½ Scotch bonnet pepper Seeds remove and finely chopped</li>
<li>2.1 oz (59.53 g) Tomato Diced</li>
<li>1.5 oz (42.52 g) Stalks scallion (green onion) Chopped</li>
<li>4 (3) Cloves garlic Crushed</li>
<li>5 (3) Sprig thyme</li>
<li>0.28 oz (7.94 g) Freshly grated ginger</li>
<li>7 Pimento barriers (allspice)</li>
<li>2 tbsp Ketchup</li>
<li>3 tbsp Cooking oil</li>

<li>1 Small lime To wash the oxtail</li>
<li>1 tbsp Vinegar To wash the oxtail</li>

<h3>Directions</h3>
<ol>
<li>Wash the oxtail in water with vinegar and lime juice. Drain away all the water, getting the meat as dry as possible.</li>
<li>Season the oxtail with salt, oxtail/all-purpose seasoning, garlic, ginger, browning and scotch bonnet pepper. Mix the ingredients until the oxtail is completely coated with seasoning. If you like, leave to marinate for at least an hour.</li>
<li>Add the cooking oil and the brown sugar to a pressure cooker pot on high heat.</li>
<li>Make the oil hot and the sugar melt, then add the oxtail. Sear the meat so that all sides are brown.</li>
<li>Add 2 ½ cups of water to the pressure cooker, close with the pressure cooker lid and cook at high pressure for 30-35 minutes.</li>
<li>Make sure the pressure cooker cool off, then carefully remove the lid. Check that the meat is soft and falling off of the bone.</li>
<li>Put to continue cooking on medium-high heat. Add the onion, thyme, scallion, tomato, bell pepper, butterbean, ketchup and Maggi stock cube.</li>
<li>Cover the pot with a normal pot cover and let it cook for another 30 minutes.</li></ol></div>

<h1>Sundial</h1> <p>From Wikipedia, the free encyclopedia.</p><p><strong>A sundial measures time by the
position of the sun.</strong> The most commonly seen designs, such as the 'ordinary' or
standard garden sundial, cast a shadow on a flat surface marked with the hours
of the day. As the position of the sun changes, the time indicated by the shadow
changes. However, sundials can be designed for any surface where a fixed object
casts a predictable shadow.</p><p> Most sundial designs indicate apparent solar time.
Minor design variations can measure standard and daylight saving time, as well.</p>
<h2>History</h2><p> Sundials in the form of obelisks (3500 BC) and shadow clocks (1500 BC)
are <strong>known from ancient Egypt</strong>, and were developed further by other cultures,
including the Chinese, Greek, and Roman cultures. A type of sundial without
gnomon is described in the old Old Testament (Isaiah 38:2).</p> <p>The mathematician
and astronomer Theodosius of Bithynia (ca. 160 BC-ca. 100 BC) is said to have
invented a universal sundial that could be used anywhere on Earth. The French
astronomer Oronce Fine constructed a sundial of ivory in 1524. The Italian
astronomer Giovanni Padovani published a treatise on the sundial in 1570, in
which he included instructions for the manufacture and laying out of mural
(vertical) and horizontal sundials. Giuseppe Biancani's Construction instrumenti
ad horologia solaria discusses how to make a perfect sundial, with accompanying
illustrations.</p> <h2>Installation of standard sundials</h2> Many ornamental sundials are
designed to be used at 45 degrees north. By tilting such a sundial, it may be
installed so that it will keep time. However, some mass-produced garden sundials
are inaccurate because of poor design and cannot be corrected.
