There is a long list of sliders which allow you to tweak multipliers for most of the important things like bladder rates, hygiene rates, irrigation, terrain fertility, how much sewage and fast fast it can spread and so on, hover over the option to see a tooltip.

The Rimatomics and Rimefeller link options will add a water requirement to specific buildings from those mods, they will need to be piped and may use large amounts of water.

You can enable or disable specific needs, this can be done while the game is running, there is also a needs filtering option which allows you to disable or enable needs based on pawns race or body types or for active hediffs, like if something becomes a zombie and it resets what needs a pawn should have. These can be modified in the defs too using patches.
