Describe how to change `compose.yml` so that Prometheus constructs a persistent data storage at `/hdd/prometheus/ (or elsewhere on disk with sufficient space) and retains data for a longer stretch of time than the default 15 days. Included description for giving Prometheus control of the directory with `chown`.
