docs: upgrade packages #189

next-docs was renamed to fumadocs, and has released 7 major versions.
- majority of changes is simply making the newest version work
removes contentlayer in favor for fumadocs-mdx which is built on top of next/mdx
- contentlayer has not been updated in a while due to lack of sponsorship/support ref
