Interpolates the data to a higher resolution to remove the "cells" in the image and make it appear smoother. There is an issue of cell wrapping now in the longitude plots though.

TODO:

  • Update this with either a repeated wrap point or something else to aid in wrapped interpolation for pcolormesh
