refactor: convert classes in table-generator.ts to functions

• converted DefaultTableGenerator and Table classes to functions
  • defaultTableGenerator now takes an options object (with only groupRows as an option) instead of the groupRows boolean
• updated unit tests, including adding a little more coverage
