On Mac M1 / M2 / M3 etc. libgdal-dev must be added to the apt-get install for the docker build to work.
That's a problem I've had on every docker image using postgis and adding this always fixes it.
Does adding that line changes anything on Linux systems? If not, maybe we can add this to avoid problems in the future.
If it does change something, maybe just add this to the docs?
