change universal-provider to use merge from es-toolkit instead of lodash

Description

changes the merge function used to be from lodash to es-toolkit https://github.com/toss/es-toolkit/tree/main

it should be compatible, and results in a much smaller bundle size for consumers.

i cant run the tests because i dont know how to configure a relay
