Update GEM Icon in chain-registry per Passed Gov Prop (#4723)

* NEW GEM token logo that passed GEM DAO Gov prop

GEM DAO is working to update the token Logo after this passing prop: https://dao.enterprise.money/dao/proposal?address=terra1f43s2vecnmlany8q87e6qafj6mnu249k0yqzg477qsdhzsv39dhq5kxdsj&id=62

* Rename GEM Logo 300 x 300.png to GEM.png

* Delete terra2/images/GEM.png

* GEM Icon with proper gem.png in lower case
