[v5] Updated Benchmark Launch Settings

Proposed Changes

Updated launch.json to work with net8.0 updates. I also set it up where the developer could have more control with the benchmarks using args rather than commenting out various sections of code in the Program.fs

I'm unsure why the mac build took as long as it did to run and I currently do not have the ability to retry actions. Let me know if you'd like to retry or if there is something I may not be seeing in my code which caused this issue.
