chore: Updated legal distribution information

• This PR consist of changes regarding to legal distribution info in Dockerfile
• Resolves TRG 7.05 - Legal information for distributions #150
• Resolves fix: USERNAME variable does not exist in Dockerfile #165

I don't think this is the right method to do it. Other teams don't copy the files explicitly in the Dockerfile but include them in the pom.xml to be part of the built .jar file. Could you try adjusting your pom.xml like here and see if you build the jar locally, does it contain the 3 files then?
