🐛 (helm/v1alpha1): using a more precise pod selector in NetworkPolicy

1. The podSelector in NetworkPolicy should use more precise labels.
2. Add default values for controllerManager.pod.labels in values.yaml, this helps the user to visualize what options are available (there are quite a few more of these issues in this plugin, do they need to be changed together now?)

Until that is done, I will not automatically test new commits in this PR, but the usual testing commands by org members will still work. Regular contributors should join the org to skip this step.

Once the patch is verified, the new status will be reflected by the ok-to-test label.
