The touchscreen base component had some breaking changes that required adaptations. Also the yaml configuration is slightly different, so updated the example-touch.yaml file as well.
Try to copy the rotation from the display, to avoid having to manually specify the transform options

This is work in progress; not fully tested, and might not work for all rotations.
