Need to sort out issues with dependency order:

Some parts of the code (whose logic was written with an options module in mind) are now making calls to the gen_server before it is up and running ...

Hrm, maybe not: (loise:start) runs just fine in the REPL ...

Looks like it's mostly just missing map keys in various default options.
