Project cleanup catchup

As part of the rewrite, we practically dropped all the projects from gatsby since many of them were unmaintained or broken.

This Issue is a placeholder/reminder to bring those back.

The goal is to have them in the data but marked as "obsolete" or unmaintained and for now not shown on the website until we decide on if and how to show these. The benefit of this is that people who do like to use the data itself for other projects (like an faq chatbot for example ;) ) can then choose if they want to show them or not. It also allows for others to link to them if the question comes up.
