IOS-328 Investigate using Xcode 15 on the iOS CI environment
We will have to switch to it before April 2024, might as well do it now |

Based on https://github.com/actions/runner-images/blob/main/images/macos/macos-13-Readme.md Xcode comes pre-installed so the change seems to be configuration-only, which is great. 👍
