While this is insteresting, this can be done using the overrides, and should be enough for now, unless there is a future need for it:

Medium Worker:
      ...
      scheduler_extra_pod_config:
        volumes:
          - name: myvolume
            persistentVolumeClaim:
              claimName: my-claim
      scheduler_extra_container_config:
        volumeMounts:
          - name: myvolume
            mountPath: /tmp/extras
            subPath: tmp/extras
      worker_extra_pod_config:
        volumes:
          - name: myvolume
            persistentVolumeClaim:
              claimName: my-claim
      worker_extra_container_config:
        volumeMounts:
          - name: myvolume
            mountPath: /tmp/extras
            subPath: tmp/extras
