Time for a v1.0.0 release🎉

The pipeline under the prototype name oneroof has been relatively stable for a while now, with very few breaking changes or feature regressions for months. As always, bugs persist here and there in the codebase, but for the sake of publications and posting data on repositories like GenBank, it's time to move to an official release that distinguishes it from the long period of time when we weren't meaningfully using semantic versioning.

So, I hereby announce that all future manuscript and data publications can cite a oneroof version that is >= 1.0.0🎉. Special thanks to @ajlail98, @William-Gardner-Biotech, and especially @akalweit5 for their contributions to the pipeline so far.
