Update the Earth Ephemeris Model to be More Accurate

Currently, the Earth ephemeris model simply uses the flight software GNC library. This means our simulations will be "doomed to succeed". We should implement a more accurate model here that we can use in simulations to be sure the approximations were making on the flight computer are still valid.
