Improve storage documentation

Improves documentation on the storage section of the documentation including configuration and return types and more examples. I can do a pass on the PostREST section if it's helpful.

hey @geoguide, thanks for the contribution! I would rather not just show the options for React Query. Either we need to add tabs and do it for both React Query and SWR, or leave it like it is today but link to their respective configuration better. wdyt?

@psteinroe makes total sense! I just have never used SWR so I was less confident in checking the config. I'll take a pass to add it.
