This PR makes it easier to integrate with other LLMs that are not OpenAI (eg AzureOpenAI or any other Local models, as long as they are recognized as LLM models in guidance-ai).
All tests passed. I did not commit any changes based on linting and formatting, as these will many files, even with the current configuration in the main branch.
