Proposed changes

We will be supporting a new function that will allow users to use liquid syntax to transform data in their mappings. I've added new doc updates to outline this new feature, supported tags and filters, as well as a few examples demonstrating this feature.

hold release of docs until we release to later tiers. i will provide an update for when that is. thanks cc @pwseg @stayseesong
